Step 1
First, line a baking sheet with a sheet of parchment paper or a nonstick baking mat — Preheat the oven to 350ºF.

Then, in a mixing bowl, mash the banana until it becomes a bit creamy but still has a few smallish chunks.

Next, add the vanilla, salt, cardamom, cinnamon, maple syrup, and coconut sugar to the mashed banana and stir.

And now, add the oats, cranberries, and walnuts to the mashed banana mixture and stir until combined. The mixture will likely appear a bit crumbly - no worries.
Step 5
Now, using a teaspoon, generously scoop the oat mixture and then, using your hands, gently shape each scoop into a ball and place on the prepared pan about a couple of inches apart. Once you've portioned out the cookies, go back and gently pressing the top of each cookie lightly with two fingers to flatten slightly while also doing what you have to do to keep the circle shape intact.
Step 6
And last but not least, bake your lovely little cookies for about 15 minutes or until you notice just a bit of browning. Be sure not to overbake... the browning should be barely noticeable. Allow the cookies to cool for a minute or two if you can stand to wait, and then, enjoy!
