Step 1
If you’re using leftover ham, chop it finely into small cubes or pulse it a few times in a food processor for a more uniform texture.

Chop the celery and onion finely, and if you’re using relish, drain any excess liquid to avoid making the salad too runny.
Step 3
In a large mixing bowl, combine the chopped ham, celery, onion (if using), and relish.

Add the Dijon mustard, white vinegar or lemon juice, and mayonnaise. Stir everything together until well combined and creamy.

Taste and adjust seasoning with salt and pepper to your liking. Add more mayo if you prefer a creamier texture.

Cover the ham salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
Step 7
Serve the ham salad chilled. Garnish with chopped fresh parsley or chives for a pop of color and freshness, if desired.
