If you’re using leftover ham, chop it finely into small cubes or pulse it a few times in a food processor for a more uniform texture.

Chop the celery and onion finely, and if you’re using relish, drain any excess liquid to avoid making the salad too runny.

In a large mixing bowl, combine the chopped ham, celery, onion (if using), and relish.

Add the Dijon mustard, white vinegar or lemon juice, and mayonnaise. Stir everything together until well combined and creamy.
