Step 1

In a large skillet (with a lid), heat the olive oil over medium-high heat. Salt and pepper the chicken and add to the skillet. Cook for 3-4 minutes per side or until golden brown. Chicken will cook longer in the sauce later. Add the garlic and cook for 30 seconds.

Step 2

Add the gnocchi, cream, chicken broth, sun-dried tomatoes, Italian seasonings, and crushed red pepper. Stir and bring to boil then reduce to a simmer. Cover with the lid and cook for 5-7 minutes, stirring intermittently, until the gnocchi is tender.

Step 3

Stir in the spinach for the last minute of cooking. Add salt and pepper to taste. Garnish with basil and serve.
