Step 1
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

In a shallow bowl add the olive oil and garlic and stir together.
Step 3
In another shallow dish add the bread crumbs, parmesan, garlic powder, Italian seasoning and and season with salt and pepper to taste.
Step 4
Dip each chicken tender in the olive oil and garlic, and then in the bread crumbs mixture, pressing the bread crumbs into the chicken on both side.
Step 5
Transfer to the center of the prepared baking sheet. Press remaining breadcrumbs on the tops of the chicken and gently press.
Step 6
Bake chicken for 10-12 minutes.
Step 7
While chicken cooks, add the zucchini, yellow squash and cherry tomatoes to a bowl.
Step 8
Drizzle with olive oil, Italian seasoning, garlic and salt and pepper. Toss to coat.
Step 9
Remove chicken from oven. Carefully flip each piece of chicken to the other side.
Step 10
Spread veggies along both sides of the chicken. Sprinkle remaining 1/2 cup parmesan cheese over everything.
Step 11
Return to oven and bake for an additional 10-12 minutes, or until chicken is cooked through.
Step 12
Serve warm. Garnish chicken with fresh parsley, if desired.
