Slice Red Onion (1), Granny Smith Apple (and Honeycrisp Apple (into thin slices.

In the large pan, heat the Olive Oil (1 tablespoon) over medium-high heat. Once hot, add pork chop and sear for 2-3 minutes or until golden brown.
Step 4
Flip the pork and sear for 2-3 more minutes. Remove the pork and set it aside.
Step 5
In the same pan over medium heat, melt the Butter (2 tablespoon). Then add onion and apples. Cook until soft, about 5-10 minutes.
Step 6
Add Brown Sugar (1 tablespoon), Apple Cider Vinegar (2 tablespoon), Fresh Thyme (2 sprig), and Fresh Rosemary (2 sprig). Cook for about 2 more minutes. Stir occasionally.
Step 7
Bring the pork back to the pan. Warm the pork for about 2 more minutes.
Step 8
Garnish with Fresh Thyme (1 sprig) and some Fresh Rosemary (1 sprig) on top. Serve
