One-Pot Coconut Curry Lentil Soup

(16 ounces) dried lentils, rinsed

carton (32 ounces) vegetable broth

curry powder

garlic clove,

coconut milk

salt

green onions

I made this recipe 12/1/22! This is a real winner of a recipe! The coconut milk and kosher salt were kept as is! I did not have vegetable broth, so I did use chicken broth! I also used one regular onion IN the soup and I DID add a can of chunked white chicken for the meatier version! I really enjoyed sampling this soup!

Made this tonight, was great! I added a chopped carrot and and a half chopped yellow onion, sadly i don't have any scallions right now. I only added one can of coconut milk, as i only have room for one in the pot i made it in, but it was still great, though probably not as rich and creamy as it would have been with two. I need to get a bigger pot! I only added 1.5 Tbsp of curry powder to start because i thought that would be too much, but tasting it near the end of cooking, I realized 2 Tbsp is right, so I added the rest. Delicious, and quick and easy! Thank you, Kijan Zendi!If you do like I did and use less liquid, make sure to check every so often and add liquid if needed and stir thoroughly so the lentils stay covered in liquid and don't dry out at the top.
