Step 1

Heat oil in a large saucepan over medium-high heat. Add garlic and onion. Cook, stirring, for 3 - 4 minutes or until the onion softens. Add mince. Cook, breaking up with a wooden spoon, for 5 minutes or until browned. Add curry paste. Cook, stirring, for 1 minute or until fragrant.

Step 2

Add coconut milk, 1/2 cup water and zucchini. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until zucchini is tender. Add snow peas and sugar snap peas. Cook for 1 to 2 minutes or until tender. Stir in fish sauce, sugar, juice and half the coriander.

Step 3

Top curry with chilli and remaining coriander. Serve with rice.
