Step 1

Add the olive oil or butter into a large skillet over medium heat. Season the chicken breast with salt and pepper on both sides. Cook the chicken for 4-5 minutes on each side until well cooked. Transfer the chicken onto a large plate and keep warm.

Step 2

In the same pan, whisk together the heavy cream, chicken broth, cream cheese, garlic powder, Italian seasoning, and parmesan cheese. Reduce the heat and cook the sauce for a few minutes or until it starts to thicken.

Step 3

Season the sauce, to taste with salt and pepper.

Step 4

Add the sun-dried tomatoes and chopped spinach. Continue whisking until the spinach begins to wilt.

Step 5

Place chicken back in the pan and cook for one more minute. Garnish with freshly chopped parsley or basil and enjoy!
