Step 1 Preheat oven to 350 F. Line a cookie sheet with parchment paper.

Step 2 Set a heatproof bowl over a pot of simmering water. Into the bowl add the butter, white chocolate and brown sugar. Stir until the chocolates have melted. Set aside until warm to touch. Stirring can help it cool faster.

Step 3 Add the salt and vanilla and stir to combine.

Step 4 Stir in the egg yolk.

Step 5 Fold in the cake flour, baking soda, sprinkles and chopped white chocolate.

Step 6 Chill the dough for 20-30 minutes in the fridge

Step 7 Dollop in 1.5 tablespoons onto the cookie sheet. If you want more sprinkles on the top, dip the balls in a bowl of sprinkles.

Step 8 Bake for 10-12 minutes, until edges are just beginning to turn golden. Let cool before moving.
