Step 1

Cut onion into thin slices and separate.

Step 2

In a small bowl, soak onion slices in ice water for 30 minutes to mellow out the flavor and add a crispy texture.

Step 3

Slice celery into even, thin slices.

Step 4

Peel and dice oranges into even sized pieces.

Step 5

Drain and pat dry onions.

Step 6

Combine celery, oranges, onions in a salad bowl.

Step 7

In a small jar, mix vinaigrette ingredients and shake to combine well.

Step 8

Add vinaigrette to orange and celery mix.

Step 9

Garnish with pecans, cheese and celery leaves or parsley.
