This simple Orange, Fennel and Avocado Salad recipe is tossed with fresh greens and mint, toasted almonds, and a quick honey-citrus dressing.  Feel free to add some chicken, shrimp or salmon if you'd like, too!

Orange, Fennel and Avocado Salad

spring greens

clementines*,

peeled,

fennel bulb,

half of a small red onion, peeled and thinly sliced

mint leaves

olive oil

lemon juice

honey

teaspoon Dijon mustard

teaspoon fine sea salt

garlic powder

teaspoon freshly-cracked black pepper

Make the dressing

Whisk all ingredients together in a small bowl (or shake all ingredients together vigorously in a sealed jar) until completely combined.

Toss the salad. 

Combine all of the salad ingredients in a large mixing bowl, drizzle evenly with the dressing, and toss until combined.

Serve. 

So delicious!  Made this last week and we loved it!

This salad is on point. Loved the variety of textures and the dressing was the perfect mix of sour and sweet. Would consider mixing in some quinoa next time to make it a little more hearty. Will definitely make again.

Oh, my goodness, Ali! This is so good! Light and refreshing. I paired with a slice of sourdough bread for lunch and felt very satisfied after. Definitely making this again!
