Step 1
Preheat your oven to 400°F then line a baking sheet with parchment paper and set aside.

Wash and trim the ends of the Brussels sprouts and remove any loose or damaged outer leaves. Cut each Brussels sprout in half lengthwise.

Place the halved Brussels sprouts in a large mixing bowl. Drizzle them with olive oil and season with salt and pepper. Toss the Brussels sprouts to ensure they are evenly coated with the oil and seasoning.

Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet or roasting pan. Roast in the preheated oven for about 25-30 minutes or until they are tender and slightly crispy, stirring them halfway through to ensure even cooking.
Step 5
Once the Brussels sprouts are done roasting, remove them from the oven. Drizzle the balsamic vinegar and the honey over the top then mix to combine. You can drizzle as much or as little as you like, depending on your taste.

Taste and adjust the salt and pepper to your liking and serve as is or with a drizzle of lemon aioli, chopped parsley, and bacon bits!
