Step 1
Cut the tofu into four lengthwise slabs.
Step 2
Lay the four slabs on a dish towel on a flat surface. Cover with another dish towel. Place something heavy on top (I use a skillet) and press the tofu for at least half an hour.
Step 3
After the tofu has pressed for at least half an hour, cut each slab into four triangles. When you're done, you will have 16 triangles.
Step 4
While the tofu presses, set out two large shallow dishes (I use pie plates). In one dish, add the olive oil and tamari (or soy sauce). In the other dish, add the finely grated parmesan, cornstarch, and all of the seasonings. Combine the seasoning ingredients very well. Heat the oven to 400 F.
Step 5
Add the triangles to the dish with the olive oil/tamari (If you can't fit all of the pieces in one dish, do this in two batches). Flip the triangles so both sides get coated. Leaving the pieces to marinade is not necessary, but you certainly can if you want to.
Step 6
Pick up each piece of tofu (Make sure you let any excess oil drip off) and place them in the other pie dish with the Doritos seasoning. Flip the pieces so both sides get covered, use your fingers to sprinkle extra seasoning on any bare spots. (See the video for this process)
Step 7
Place each coated piece of tofu on a large baking dish lined with parchment paper. Go ahead and sprinkle any remaining Dorito coating from the pie dish onto the tofu triangles.
Step 8
Once the oven is heated to 400 F, bake for 15 minutes. Flip each piece and bake for another 15 minutes.
Step 9
Serve and enjoy!
