To make these yummy baked lemon pepper chicken thighs, grab 2-3 pounds of chicken thighs (about 8-10 thighs) and trim off any excess fat. You can also cut the thighs into smaller pieces, if desired. This is definitely the most time consuming part of the entire recipe, but definitely worth it.
Preheat oven to 400 degrees
Next in a large bowl coat the chicken thighs with olive oil and freshly squeezed lemon juice and sprinkle with salt and pepper.
