Step 1

Season steaks generously with salt on both sides. Leave them at room temperature for 45 minutes. About 5 minutes before cooking, preheat the oven to 400 degrees and a cast-iron skillet to high heat with olive oil or butter

Step 2

Sprinkle black pepper on steaks. Sear strip steaks on each side for 2-3 minutes. Flip only once using tongs

Step 3

Transfer the pan to the middle oven rack. Cook steaks for 4-8 minutes, depending on your desired doneness level. Use a digital thermometer to check the temperature of the thickest part of the meat

Step 4

Move steaks to a cutting board or plate. Tent with foil. Rest for 5-10 minutes
