Boost the flavor of already tasty carrots by oven-roasting them. The panko pecan topping is optional.

Oven-Roasted Carrots

carrots,

olive oil

Italian seasoning

pecans

panko bread crumbs

Preheat the oven to 425 degrees F (220 degrees C).


Toss carrots with olive oil and Italian seasoning in a bowl and spread out on a rimmed baking sheet.


Roast in the preheated oven for 15 minutes. Sprinkle pecans and panko on top and continue roasting until golden, about 5 minutes more. Serve immediately.


Overall this was quite a nice dish.  I think the oven temp could have been reduced a but, but it could be due to the rather small size of the carrots.  The oven roasting does release the sugars in the carrots, and they are surprisingly sweet.

Easy and flavorful, but something wasn't quite right with the panko bread crumbs.  Maybe I'll mix the panko and pecans together in a little olive oil.... not sure.

I enjoyed these simple carrots with my holiday dinner. My cousin advised these were the first cooked carrots she's ever eaten and liked! It had a great flavor and crunch but it felt like it was missing something to take it over the top. If I figure out what that is, I will update this comment!

Made this with Christmas dinner and New Years Day it was a hit both times with family.

It was excellent. Will definitely do them again.

Great tasting. We will add the nuts next time.
