Oven-Roasted Spiced Carrots

carrots,

I love this recipe. It's easy (I just use a 2lb bag of baby cut carrots), fits many dietary plans (paleo, whole 30, etc) and so tasty. I crave it and make it often.

I don't "carrot" if I ever find another carrot recipe again.  This one was awesome.  The combination of spices was excellent.  The cooking process couldn't be easier.  The flavor is amped up with the coriander, cumin, chili powder, ginger, cinnamon and cloves.  And others.  Next time around I'll try Chinese five spice to substitute for some of these winners.

Community cooks like me and you will be delighted to try this recipe that Joan Duckworth shared with us.  Aren't we lucky?  I'll be making this again soon!

Too many spices took over the carrots. Although it's better than all those sugary carrot recipes.

I like the addition of all the spices!  It was a refreshing change of pace.  I thought I would have to cook them longer, but it was right on target with the recipe.  Our kids are plain eaters and weren't huge fans, but my husband and I thought the carrots were delicious.

I made this today and I doubled all the spices, as I do with almost everything. Did not use coriander because I didn't have any. Excellent taste. Will make again. Tastes best hot out of the oven.

I made this today and my family absolutely loved them!  The carrots taste just like sweet potato fries so my 14-yr daughter added oregano to her carrots. There were no leftovers, but my 11yr son was wanting more.  A keeper recipe of which I will make a lot.  Thanks  Joan!!

Delicious recipe, Joan.  I served it with Fettuccine Alfredo recipe.  I added the chili powder, the cinnamon, and an 1/8 teaspoon of cocoa powder.

My husband and I loved this recipe...a new favorite! Since it's just the two of us, I did cut the recipe in half. I also diced my carrots and roasted them until tender. I'm always looking for new ways to use my homegrown carrots and this recipe is definitely a winner!

This recipe is a definite keeper!  There is only two of us left at home but the leftovers were great in our lunches the next day.  This will be on the top of our "good for you" recipes.

I make roasted carrots all the time and love them, but these spices are a wonderful addition!

Unlike the other readers, I didn't care for this at all. Way too many spices. I like the idea of roasting them, but due to all the spices, I couldn't taste any carrot at all. Will make again with alot less spices.

These roasted carrots have a wonderful flavor.  I will definitely make these again!

Made this for our Easter dinner. GREAT! I loved all the spices and the way it blended together. I will be making this again.

After making these carrots a couple of times, 2 of my grown kids requested it for a subsequent dinner.  And one of these kids don't consider carrots a favorite veggie!  The time and temperature listed  in the recipe are right on and I don't mess with that which was written--especially after I tried a different temperature and time to accommodate an entree in order to cook in the same oven and the carrots were less good.  If temperatures of entree and carrots differ, I use my second oven.  The spice amounts seem correct as well and the carrots are tender but not mushy.  Some carmelization will occur during roasting but that's ok.  A keeper for years to come!

My whole family loves this.  Even the picky one gets excited when I make it.

I was disappointed.  I don't like crunchy carrots and the spices were not that great. Sorry.

I halved the recipe and served it with a roast pork loin dinner.  Greatly enjoyed the spice blend.  This recipe is on our keeper list!

Fantastic recipe. Carrots were tender yet firm; spices were right on target. The hardest part was assembling the spices! This is a hit at our house and it's a keeper.

I used all the spices except the coriander, just because I didn't have any.  This was really simple to make and delicious.  My kids called it carrot fries.
