Step 1

Make sure your prep is done, mince your garlic, piece out your oyster mushrooms

Step 2

Mix together the sisig sauce, plus the garlic, in a bowl making sure that the sugar has fully dissolved and set aside to meld together for five minutes

Step 3

Place pan on medium-high heat and add oil

Step 4

Once the oil is shimmering and hot, add mushroom and sear both sides for 2 minutes or until the mushrooms are browned. Be careful not to crowd the pan or else the mushrooms will steam and will not sear

Step 5

After the mushrooms are seared on both sides, add sisig sauce and toss together until sauce has reduced and caramelized, sticking onto the mushrooms

Step 6

Place mushrooms in a bowl, garnish with pickled red onions. Serve with a side of atchara
