Step 1
To make the basil dressing, whisk together the oil, vinegar, basil, green shallot and garlic in a jug until well combined. Taste and season with salt and pepper.
Step 2
Heat a small non-stick frying pan over medium heat. Add the chorizo and cook, stirring occasionally, for 3 minutes or until crisp. Remove from heat.
Step 3
Arrange oysters on a large serving platter. Top with chorizo and drizzle with basil dressing. Serve immediately.
