Thickly slice cauliflower.
Step 2
Heat 1/2 the butter and 1/2 the oil in a large frying pan over medium-high heat. Cook 1/2 the cauliflower, turning occasionally, for 8 to 10 minutes or until golden and beginning to char (see note). Repeat with remaining butter, oil and cauliflower. Transfer to a serving plate.
Step 3
Add walnuts to pan. Cook, stirring, for 2 minutes or until just toasted. Add spice blend, sugar and currants. Cook, stirring, for 1 minute or until sugar caramelises and coats the walnuts. Remove from heat.
Step 4
Sprinkle walnut mixture and parsley over cauliflower. Season with salt and pepper. Serve.
