Step 1

Cook potatoes in a saucepan of boiling, salted water for 15 minutes or until just tender. Drain. Cool. Cut into thick slices.

Step 2

Combine potato, onion, coriander, parsley, 1 tablespoon oil and salt and pepper in a bowl. Cover and set aside.

Step 3

Rub white pepper over both sides of salmon. Heat remaining oil in a large frying pan over medium-high heat. Cook fish, skin side down, for 3 minutes or until skin is crisp. Turn and cook for 1 to 2 minutes or until cooked to your liking. Transfer to a plate. Cover and stand.

Step 4

Reduce heat to low. Add chilli jam, chilli, sugar and fish sauce to pan. Simmer for 2 minutes. Add 2 tablespoons lime juice and simmer for 1 minute.

Step 5

Place salmon on plates. Drizzle with warm chilli lime sauce. Serve with potato salad.
