Mix together well and cook. You want your batter quite thick for a nice fluffy pancake/pikelet. If your batter is too think just add a bit more milk.

Now - the trick to the perfect pancake or pikelet is all in how hot your pan is. You don't want a super hot pan. I find that an electric frying pan gives the best heat. You need it down low and patience is required. They will take longer to cook but will be the perfect colour once ready. I use butter to grease the pan but don't use too much as this will darken your pancakes/pikelets. Enjoy!
