Combine the sauce ingredients in a medium bowl, whisk and set aside.
In a medium-size bowl, stir the marinade ingredients and add in the thinly sliced chicken.Marinate in the fridge for at least 30 minutes or overnight.
Heat a wok or pan over high heat. Once the pan is hot add the chicken in a single layer, without the marinade. Don't crowd the pan, cook in batches if needed. Cook chicken until golden brown, about for 1 minute on one side and 1 minute on the other side. Remove the chicken from the pan and set aside.
Add the mushrooms and zucchini to the same pan and saute for 2 - 3 minutes. Lower the heat to medium and add back the chicken.
Give the sauce a stir and add it to the pan. Saute everything together for 2-3 more minutes, until the sauce has thickened.
Top with sesame seeds. Serve immediately.
