Step 1
Make Pandan Extract: Wash the pandan leaves thoroughly. Cut 2 of the pandan leaves into 1 inch lengths. This should give you roughly 1/2 cup of pandan leaf pieces. Combine 1/2 cup of pandan leaf pieces with 1/2 cup of water in a blender. Blend until the leaves are broken down, then strain the leaves out. You should end up with 1/2 cup of bright green pandan extract.
Step 2
Make Simple Syrup: In a small saucepan over medium heat, combine 2 cups of water, 4 Tablespoons of sugar, and the remaining 2 pandan leaves (cut or knotted to fit into the pot). Allow to simmer for approximately 10 minutes so that the water is flavored with the aroma of pandan. Allow the simple syrup to cool.
Step 3
Make Pandan Juice: Mix 1/2 cup of pandan extract with 2 cups of the pandan-infused simple syrup. Allow to cool in the refrigerator. When you're ready to drink, pour the Pandan Juice over a glass of crushed ice. Garnish with fresh pandan leaves, if you like.
