Step 1
If using pizza dough that has been in the refrigerator, place the bagged dough on the kitchen counter for one hour before starting.
Step 2
On a piece of parchment, divide the dough into four equal pieces. Roll one piece into a rope that is about 10 inches in length. Using a pizza cutter or sharp knife, divide dough into 10 pieces, each about an inch in length. Repeat with remaining dough and place onto prepared baking sheet evenly spaced. Cover the baking sheet with a tea towel and allow to rise for 30 minutes.
Step 3
Preheat oven to 400°F. and spray a rimmed baking sheet generously with cooking spray.
Step 4
Melt the butter in the microwave in a microwavable safe bowl. Add the garlic, Italian seasoning, and salt, and mix well.
Step 5
Brush the tops of the bites with half of the garlic butter, reserving the remainder when they are removed from the oven.
Step 6
Bake for 15 minutes. They will be very lightly golden. Do not over bake or they will become hard.
Step 7
After taking them out of the oven, brush half of the bites with half of the remaining butter, and sprinkle the tops with half of the grated Parmesan cheese. I've found it's easiest to do half so that the butter is still wet enough for the cheese to stick. Brush remainder of the bites and sprinkle with cheese.
Step 8
Serve with your favorite marinara or an olive oil dipping sauce.
