Heat oil in a large nonstick skillet over medium-high heat. Add the onion, garlic, thyme, and mushrooms; sauté 5 minutes or until onion is tender. Add chicken; sauté 4 minutes or until the chicken is lightly browned. Add wine, salt, and pepper; cook 3 minutes or until liquid almost evaporates.


Stir in rice and broth. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until liquid is absorbed. Stir in cheese and parsley.


I am not going to waste paper and printer ink to print this recipe, and all others, when I used to be able to save them! Bring back the save option!

Brown rice tastes different to white rice which is why the taste wasn't there for you. Also, I would make th e rice separate, if it's not instant, and just add it to the chicken when it's done.

Easy, delicious, flavorful.  I did substtitue the basmati rice for instant rice which also meant i had to add more broth, which also meant it took a little longer to cook.I also added spinach.I also am unable to save the recipe.  It would be nice if it would return to myrecipes.com

As others have said...I use other websites because Cozi is at best difficult and more often impossible to use.  

I agree...I can't save a recipe to my recipe box! Don't like the new Cozi at all! Will print recipes instead!

Thank you for explaining why I can't save recipes like I used to.  I thought I was doing something wrong.  Have given up on this. Have gone to Paprika Recipe Manager.  Much easier to save recipes there.  Cozi gets MINUS 5 stars!

Agree - Cozi is pretty useless.  I tried it on 3-4 occasions and gave up.  I print recipes now and keep them in a 3-ring binder.  Old school, but far better than Cozi.  And Cooking Light recipes are generally fairly bland because of their fear of salt and other "bad" things that make food taste good.  Adjust the seasonings to your own tastes.

I agree!  Cozy is terrible!  I have filed complaints with Cozi and spent lots of time trying to make it work.  I lost YEARS of saved recipes because they did not transfer and after trying to deal with Cozi customer service they cancelled my account, losing the remainder of my recipes.  Very sad . . . Such a terrible program.

I totally agree with the other reviewers!  Cozi is NOT user friendly.  There should be a direct link to save the entire recipe instead of having to copy/paste if you're going to keep Cozi as the depository for MyRecipes.

Flavorless - with such good ratings, very disappointing.

I adjusted the seasonings to our tastes, made my own rice in broth and used a pound of boneless skinless chicken thighs and we got 2 nice hearty portions out this. It's easy to make and we'll have it again.

I do NOT like the new cozi also - very hard to use - not user friendly at all. Bring back myrecipes.com!

I agree also.  Most of the recipes I had saved with My.Recipes are now gone.

Cozi is not my favorite website. The old one was much easier to navigate and speedier. Just shouldn't fix things that aren't broke.

what tasty comfort food  !!  i used a rice blend, baby bellas,  and cooked everything separately then put together at the end.   was almost like risotto.  extra parmesan of course!!  i think that's what makes it so good !!   will def make this again.    served with cooked carrots  mixed with cayenne - garlic infused honey.

Amazing Muffins look tasty..The ingredients will never fit into my muffin tin.  Are there extra large tins available?

 This is a perfect weeknight dinner. I browned the chicken and mushrooms in a skillet.   I didn't use instant rice - I just made jasmine rice in my rice maker and added to the skillet when it was done cooking.  At that point, I added some homemade chicken broth.  I used Mrs. Dash, because my family loves the mixture of spices and it doesn't make the dishes overly salty.  The fresh parmesan cheese is definitely needed!  Nothing special, but easy, quick, and good!  

I have also found Cozi not to be as user friendly and My Recipes, so I have created my own file on my desktop and this is working very well.  With this new folder, I can combine recipes that I find from any source.

It was just very bland for my husband and I. I like the method and ingredients though. I will add more seasonings to it next time.

I loved this dish.  Loaded with flavor.  I substituted asparagus for mushrooms, and thought the dish had a lot of color and texture.  I would also recommend substituting brown rice for white rice in order to add texture.  You can alter the recipe many different ways but it is a good, solid recipe.  Especially great for cold nights.

I was just thinking that I don't have instant rice.  Thinking that I'll start the broth and rice separately then add it to the chicken mixture for the last 5-10 minutes of cooking.

I, too, have not been able to save recipes since the switch to Cozi. Prior to Cozi, I had no issues with the MyRecipes way of saving recipes.

I discovered I didn't have instant rice on hand, so I made some brown rice on the stove top and attempted to finish it in the liquid, but the rice didn't seem to absorb all of it so it was a tiny bit soggy.  The flavors were just not quite right though.  I have other CL chicken and rice dishes I like much better so I will stick with those.

Excellent dish - I have picky eaters in my family but they all raved about this meal.  I made it with brown rice instead of white.  I made the rice separately and added less chicken broth than the recipe called for.  I also added some thinly sliced carrots.  Super easy to make.

This is actually one of my favorite recipes from Cooking Light! I followed the recipe exactly, but subbed Romano cheese for Parmesan and it was SO flavorful. Super duper easy and quick, perfect weeknight recipe. Also, we added a little Cholula to give it some spice and it was delicious. A++

This was fantastic! I changed very few things on this recipe... I used chicken thighs instead of breasts or tenderloin (it's what I had on hand) and I used regular rice instead of instant (I was out of instant... And for the record, anyone who's having trouble with rice simmer times isn't using instant... Parboiled rice IS NOT the same as instant rice!!!). I simmered the parboiled rice for 15 minutes (instead of 20 which would cook it fully) on it's own and then drained it and added it at the end per the recipe. It worked out *perfectly*... The last five to seven minutes of cooking was just enough to soak up the liquid and finish cooking the rice. I also seasoned my chicken with poultry seasoning and a little Prudhomme's Chicken Magic seasoning. Otherwise, I followed the recipe and my family raved and all went back for seconds. I served it with baby peas, which we all mixed in the rice in bowls, and wheat french bread. Definitely going to cook this again!!!

We really enjoyed this tasty one pot dinner.  Made exactly as directed.  Had to cook the rice a few minutes longer but we kept opening the lid to check on it so it wouldn't be overcooked.  We used Uncle Ben's converted rice which turned out perfectly after the extra few minutes.  The wine gave it a very tasty, complex flavor, not usually found in the usual rice/chicken casseroles.  My kids said it was a keeper and my husband and I agree.

Fairly simple one pot recipe for easy weeknight dinners.  Be sure to use fresh grated parmesan cheese for a richer flavor.  I serve with CLs super easy balsamic roasted asparagus every time.  Healthy, easy and delicious...can't beat that.

Made a few minor changes as suggested here...cooked long grain rice with chicken broth/water beforehand, used 1 clove of fresh garlic, 1 small yellow onion, 1/3 cup parmesan, and added a little more white wine when mixing it all together...good meal, but not great. Don't think I'll make it again.

I tried this recipe tonight and me and my boyfriend loved it! I did not have the wine but it was totally fine without it. I'd def. recommend this dish.

Just made this for dinner for my boyfriend, made a few minor changes and it was delicious. Cooked 5 minute instant rice in chicken broth, added Parmesan cheese to rice once it was cooked separately of the vegetables and chicken and let it melt in. Fresh cut the mushrooms, (used red instead of white) onion, 3 cloves garlic, and added 5 thick asparagus stalks cut into pieces. Left out the thyme and parsley just because we didn't have them and used regular white cooking wine, nothing special. Turned out great!!

I made this last night. While it was tasty, my rice was severely undercooked even though I kept it simmering a lot longer than the 5 minutes described above. Did I possibly do something wrong? 

Otherwise, I liked the flavors.  Next time, I might cook the rice before and just not add in chicken broth.

Quick and easy!  I did season the chicken with salt and pepper prior to browning, and perhaps i will add additional seasonings the next time, as the chicken in itself was a little bland.  But otherwise a very tasty dish!

i don't like mushrooms so i substituted chopped, frozen, haricot vert (long thin green beans). tasted very good.  i also used only 1/3 c parmesan to save on the calories a bit and substituted veggie broth instead of chicken.  delicious.  i will definitely make this again.  i should add that like others i thought the flavor did not pop at first so i added a little extra salt and pepper and that brought the other flavors right out.

Easy and delicious. Everyone in my family really enjoys this and it's made with ingredients that I typically have on hand. I don't usually buy instant rice so I just cook the rice separately in the broth and add it at the end. I usually throw in a handful of frozen peas for color towards the end.

OMG. This was so easy and soooooo good. I had to force myself to stop eating this. Definitely a winner.

I followed the recipe mostly, but used wild rice and an exotic mushroom blend and yet still I found it a little bland.  It was ok, but I've made much better recipes from this website.

I thought it was great. Not bland at all. Def quick and easy. The honey and 12 year boy old gobbled every last bite. I added few extra spices and also used a 1/4 cup of dry sherry since I had no wine on hand. Will make again. I also used frozen pre-sliced mushrooms. Makes weeknight meals very quick and easy. I served roasted butternut squash and green beans with it.

This was easy and tasty.  No flavor explosion for us, but still a very nice dinner.  Served with corn and garlic bread.  I also followed another review and cooked brown rice in a separate saucepan then added it to the chicken mixture.

DELISHHH! I tweaked it a little though to make it healthier. I used brown rice and I cooked it separate in chicken broth. I ended up adding more wine for flavor. I served it atop a bed of steamed spinach. So yummmy and so simple.

Thought this was OK, but certainly not outstanding.  I don't cook with instant rice, so I added the already cooked long grain white rice (cooked with equal parts chicken broth and water) at the end.  It was a little dry, so I added chicken broth to moisten to the right consistency.  I don't mean to be totally negative, but I thought the flavor was just rather ordinary, and I'm not sure it's something that I would make again.

Reviewers who called this bland did something wrong.  The flavor was rich and fabulous! I will definitely make again.  It's too casual to serve for a special occasion, but the taste is five stars.  I followed the directions exactly.  I cook almost exclusively from Cooking Light, and this is a keeper.

This is a solid weeknight recipe.  I added about 1/2 lb asparagus at the same time that I added the wine, salt, and pepper.  I also used regular, long grain rice instead of instant rice.  So I cooked the rice in the broth + 1 cup water for 20 minutes, then added the cooked rice at the end where it calls for instant rice and broth.  The rice soaked up the remaining liquid very quickly, and the whole dish tasted amazing.

This was surprisingly flavorful.  The whole family enjoyed it, including our picky 3 year old.

I'm not sure why people give this recipe 5 stars but it is a good, solid, tasty recipe that I would make again.  It was nice not to have many pans to wash up. It took more like twenty-five minutes rather than five minutes for the rice to absorb the liquid.  I did follow someone's recommendation to add asparagus and that was a nice touch.

This was a great meal for a busy weeknight. I let my frozen chicken thaw while I measured and prepped the rest of the ingredients. It took me longer to reduce the wine and cook the rice than the recipe calls for, but I let it go until the rice had absorbed all the liquid like the recipe says, and it was perfect. Not a bite left. Will definitely make it again.

Very easy and my family loved it.  I think I'd add asparagus 3 minutes before the end and just serve it all together.  So great because it's all in one pan!

My husband and I made this for dinner a couple of months ago. It was very delicious! We used sweet white wine instead of dry and we cooked non-instant rice in a rice cooker then added it to the recipe. It turned out great. The texture of the mushrooms mixed with the chicken was a good combo. Also, since we had sweet wine you could taste a faint hint of the sweetness. I am definetly making this again.
