Step 1
Lightly steam potatoes in the microwave for 5 minutes or until just soft but still firm.
Step 2
Remove potatoes from microwave and allow to cool for 5 minutes.
Step 3
Slice each potato vertically about every 5 mm, being careful not to slice through to the bottom of the potato.
Step 4
Smother each potato with olive oil ensuring the oil goes between the slices.
Step 5
Fill each wedge with the parmesan cheese down to the bottom of the cut.
Step 6
Place on a lined tray and bake at 190C for 45 minutes.
Step 7
Remove from oven and sprinkle a little extra parmesan over each potato before serving.
