Step 1
BasePulse biscuits in food processor until crumbs. Add melted butter and pulse until combined. Press into a 24cm spring form cake tin and press down firm with the base of a glass or similar. Refrigerate whilst preparing the filling

FillingBeat Cheese, sugar and vanilla until smooth. Add fully dissolved gelatine and mix until smooth. Add passionfruit pulp and mix. Add whipped cream and mix lightly or fold in. Pour filling into prepared base and return to refrigerator.
Step 3
JellyPut the gelatine into the microwave for 5-10 seconds to melt and add to sugar and water, stir in passionfruit pulp and, when cooled, pour on top of chilled cheese cake. Return to fridge until jelly has set 1 - 1.5 hours.
