Step 1
In a large pasta pot, heat olive oil and add garlic cloves and crushed red pepper flakes, and saute garlic until garlic turns golden brown, about 2 minutes.
Step 2
In the meantime, open the packages of broccoli and pour them into a colander and rinse under cool water for a few seconds. Allow draining well.
Step 3
When the garlic is golden brown, add the broccoli and stir for about 2 to 4 minutes.
Step 4
Add salt and 4 cups of water. The water should be just above the broccoli mixture.
Step 5
Bring to a boil. Add the spaghetti to the broccoli mixture and stir occasionally. Cook for 5 to 6 minutes.
Step 6
When the water is fully absorbed, taste the pasta, it should be al-dente or to your liking. NOTE: If you need to add additional water, add very small increments, about 1/4 cup each time until the pasta is cooked to your preference. Be careful not to add too much water, or you could end up with soup.
Step 7
Taste and season with salt and pepper to taste.
Step 8
When spaghetti is done, transfer it into individual pasta bowls and serve immediately.
Step 9
Add some Parmigiano cheese on top and enjoy!
