Step 1

To make pasta with zucchini and salmon , first prepare all the ingredients: remove the skin from the salmon fillet and remove any bones with tweezers, then cut it into cubes 1 . Trim the zucchini 2 and cut them into julienne strips using a mandoline or a mixer 3 .

Step 2

Clean the scallions and slice them thinly 4 . Chop the mint 5 and almonds, and ground them with a mixer 6 . Finally, put a pot of boiling water on the heat to cook the pasta.

Step 3

Heat a little oil in a pan and fry the scallions 7 , then add the zucchini 8 and a pinch of salt. Cook over medium heat for about 5 minutes, and flavor with fresh mint 9 .

Step 4

Add the salmon 10 and brown it quickly, then add white wine 11 . Meanwhile, cook the pasta in boiling salted water 12 .

Step 5

When the pasta is al dente, drain it in the pan with the sauce, taking care to keep the cooking water 13 . Sauté everything over high heat, add some pepper 14 and deglaze with the filtered lemon juice 15 .

Step 6

If needed, add a ladle of cooking water 16 . Turn off the heat and complete with the chopped almonds 17 . Your  pasta with zucchini and salmon  is ready to be enjoyed 18 !
