Preheat the oven to 180°C.

Step 2

Heat the oil in a small ovenproof frying pan over a medium heat.

Step 3

Add the red pepper and garlic and cook gently for 5 minutes or so to soften the pepper.

Step 4

Whisk the cream, Parmesan and smoked paprika together in a small bowl.

Step 5

Set the chicken on top of the peppers in the pan.

Step 6

Pour the creamy mixture over, then season.

Step 7

Transfer the pan to the oven and bake for 18–20 minutes.

Step 8

Don't be afraid to cut into the chicken to check that it’s fully cooked.

Step 9

The sauce should be thick and bubbling and the chicken should be moist and tender. Serve immediately.
