Add vanilla to cream. Whisk until soft billowy peaks.
Step 2
Add frozen blueberries, lemon juice, icing sugar to a saucepan. Heat until blueberries have broken down slightly. Adjust seasonings to taste.

Allow to cool completely before using.
Step 4
Top pavlova with whipped cream. Arrange raspberries atop cream. Drizzle over cooled blueberry compote.
Step 5
Finish with dusting of icing sugar. Serve and enjoy!
