Step 1
Place split peas into mixing bowl and mill 15 sec/speed 8. Transfer into a bowl and set aside.

Place onion, garlic and leek into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Add oil and sauté 3 min/120°C/speed 1.

Add carrot and celery and chop 6 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Add ham hocks, pepper, stock paste, 850 g of the water and reserved split peas, and cook 99 min/100°C//speed 1.
Step 6
Add remaining 250 g water and cook 30 min/100°C//speed 1. Carefully remove ham hock pieces and separate meat from the bones. Discard bones and return meat (chopped into bite-size pieces) back into mixing bowl. Serve soup hot, garnished with parsley leaves.
