Step 1

Set a cooking pot / sauce pan over medium heat. Add olive oil.

Step 2

Once it's hot, add bay leaves + cinnamon stick + garlic + onion.

Step 3

Stir-sauté for 3-4 minutes, or until the onion is translucent.

Step 4

Now add green peas and stir-cook for 2 minutes.

Step 5

Add water. Cover the pot and cook for 12 minutes over medium heat.

Step 6

Once cooked, uncover the pot and remove the bay leaves + cinnamon stick using a tong.

Step 7

Add mint leaves + coconut milk + salt + pepper. Stir-cook for 1 minute.

Step 8

Transfer to a blender and blend until creamy (make sure you have a heat-proof blender jar...if you don't let it cool and then blend).

Step 9

Pea mint soup is ready. Reheat if necessary and enjoy!
