2 fresh peaches, chopped or sliced2 fresh large tomatoes, sliced4 ounces fresh mozzarella cheese, chopped or slicedfresh basil leaves (I used about 15 small)extra virgin olive oil, for drizzling (I used about 2 tablespoons)balsamic vinegar or glaze, for drizzling (I used about 1 tablespoon)sea salt (I like pink himalayan)pepper, optional

Step 1

On a large plate, arrange peaches, tomatoes and mozzarella cheese. (Can make them into "sandwiches" or just throw them together). Top with fresh basil leaves.
