Preheat oven to 425 degrees f.

Mix together brown sugar, cinnamon, nutmeg, ginger, cornstarch, and salt in a small bowl.

Place peach slices onto puff pastry leaving about 1 inch space on the sides.
Step 6
Wrap puff pastry. Beat an egg in a small bowl and brush the edges of the puff pastry. Sprinkle with coarse sugar (optional).
Step 7
Bake in preheated oven for 25-30 minutes until sides of puff pastry are browned and peaches are softened.
Step 8
Place apricot preserves in a small bowl and microwave for 20-30 seconds. Brush the top of the peaches.
