Preheat oven to 350 degrees.

In a small bowl, add flour, baking soda, and baking powder. Whisk together.

In a large bowl, beat together the softened butter, peanut butter, brown and 1 cup white sugar.

Add in eggs, one at a time, and beat just until blended.

Add in vanilla just until blended.

Slowly add in the flour mixture until blended.

Using a 1-inch scoop, roll cookie dough into balls.

Place remaining 1 tbsp sugar in a bowl.

Dip a fork in sugar bowl and use it to flatten cookies in a criss-cross pattern.
Step 10
Bake for 9-11 minutes or until edges are golden brown.
Step 11
Remove from oven and let cool for 3-5 minutes until hardened enough to move to a cooling rack.
Step 12
Let cool completely.
Step 13
Once cool, spread 1/2 tbsp of jelly on the flat side of one cookie. Top with another cookie.
Step 14
Repeat with remaining cookies.
