Export 2 ingredients for grocery delivery
Step 1
Use a food processor to finely chop the entire package of cookies. Measure 1-3/4 cup of cookie crumbs and place them into an electric mixing bowl. Reserve remaining cookie crumbs and place them into a separate, shallow bowl.
Step 2
Add powdered sugar to the large bowl of cookies and mix. Add in peanut butter and mix well. Mixture will be stiff.
Step 3
Line a baking sheet with wax paper and make room for the baking sheet in your refrigerator.
Step 4
Use a tablespoon portion scoop to scoop into balls. Roll each ball until smooth, using your hands, then roll each ball into the reserved cookie crumbs. Place on the prepared baking sheet. Refrigerate for 1 hour or until firm. If necessary, cover and refrigerate until ready to serve.
Step 5
Place into small, mini muffin paper liners and serve. Cookie Bites can be stored in the fridge until ready to serve. (They firm up better that way too!)
