Step 1

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Step 2

In a large bowl, combine the peanut butter, 1 cup granulated sugar, the egg, and vanilla extract. Stir together until well combined and a smooth dough forms.

Step 3

Scoop out teaspoon-sized portions of the dough and roll them into balls. If desired, roll each ball in additional granulated sugar to coat. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart.

Step 4

Bake the cookies for 8-10 minutes, or until they are lightly golden and slightly cracked on the surface.

Step 5

Immediately after removing the cookies from the oven, gently press a chocolate kiss into the center of each cookie. The heat from the cookies will slightly melt the chocolate, helping it to adhere.

Step 6

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
