Ingredients: 1/2 cup smooth peanut butter; 1/4 cup virgin or extra-virgin coconut oil or vegetable shortening; Chocolate, strawberry or Neapolitan ice cream

Why should chocolate lovers have all the fun? Now peanut butter fans can have a nice crunchy shell on their ice cream, too. If you use coconut oil you get the bonus of a little tropical flavoring, though it takes just a tad longer to set up.

Peanut Butter Shell

coconut oil or vegetable shortening

strawberry ice cream

Combine the peanut butter and coconut oil in a microwave-safe medium bowl, and microwave for 30-second increments, stirring after each, until smooth and runny. Let cool at room temperature for a few minutes.

When ready to serve, pour the coating over the ice cream, and let it harden.

Excellent!  Used refined coconut oil. Delicious and easy!

I used vegetable shortening since that's all I had and it was listed as an option. I used Jif pb. This was not good at all and was flavorless and I wasted a bowl of ice cream boo hoo!

I just made this to put over Blue Bell natural vanilla bean ice cream and it was delicious! I actually cut the recipe by 1/4 and it made 2 perfect servings for my husband and I. 2 takeaways - you can definitely taste the background of coconut but it's still delicious. Also - we use natural peanut butter so it's not sweet at all. I added probably 1/2 teaspoon of sugar and it was perfect
