In a bowl mix together the peanut butter, garlic, soy sauce, sesame oil, white vinegar, half of the green onions (reserve the rest for a garnish), cilantro, ground ginger and salt

Add chicken to the peanut sauce, toss well until all the pieces are evenly coated

Not necessary, but this chicken is best if allowed to marinate for at least 1 hour or over night

Heat oven to 400° F
Step 5
Place a cooling rack on top of a rimmed baking sheet
Step 6
Spray or brush the cooling rack with oil to prevent sticking
Step 7
Thread the chicken onto metal skewers or wooden skewers that have been thoroughly soaked in water to prevent burning
Step 8
Bake chicken for 20 minutes or until the internal temperature reaches 165°F.**This recipe is also great grilled over medium high heat
