Step 1
Put all ingredients in a saucepan and bring to the boil. Reduce over low heat. Stir again and again, especially towards the end, so that nothing starts. This can take an hour or more. Season with chilli, pepper, salt and cinnamon to your own taste.

You can puree the mass. I really like it when you press the larger pieces against the edge of the pot with the mixing trowel.

Pour hot into twist-off jars and close immediately. Let cool on the head.

You can also cook grated, fresh ginger with it. Gives it a certain sharpness of its own.
