Pepper Jack Hash Brown Casserole

(30 ounces) frozen shredded hash brown potatoes, thawed

(10-1/2 ounces) condensed cream of chicken soup, undiluted

shredded pepper jack cheese

heavy whipping cream

butter, melted

sour cream

Parmesan cheese

salt

onion powder

garlic powder

pepper

TOPPING:

potato chips

bacon strips, cooked and crumbled

paprika

These potatoes are absolutely amazing ‼️💯 Pepper Jack cheese is one of my favorite types of cheese, so I knew I would like them. I just had know idea how much I would ❤️ them! 
I chose to use a mixture of Jalapeño kettle chips and Parmesan Garlic kettle chips to crush up for the crumb topping. 
These potatoes are similar to a recipe I’ve made frequently. However, these have amazing flavor, gooey, cheesy goodness and a wonderful crunch all in one bite.
I’m sure they would freeze well but I enjoy leftovers for lunches and think with the bacon in the topping, they would actually be an excellent choice to have for breakfast the next day! 😋
My son and husband enjoyed them just as much as myself and will no doubt be added to our rotation of favorites!🥰

This is the MOST amazing hash brown casserole I’ve ever had. Regular hash browns just won’t cut it anymore! This casserole is ooey-gooey flavourful  perfection! After one bite you’ll be hooked!!

<p>I call these "don't tell my cardiologist potatoes". My husband loved these, I wasn't too crazy about them, very rich. I used freshly grated hash browns. I think it needed more substance like onions and green peppers. </p>

Wow. It sounds wonderful. But all of that butter, cream, chips, cheese & potatoes sounds like a heart attack ready to happen. I didnt know you could freeze cheese?

Very creamy and rich.  I was expecting a spicier result due to the pepper jack cheese, so that was a bit of a disappointment.  If I make this again, I will use Southern-style hash browns and replace the heavy cream with a smaller amount of either Half & Half or whole milk.  Even though I combined all of the casserole ingredients before adding the shredded hash browns, the shreds still broke apart as I was combining everything and the casserole's texture reminded me of a twice-baked potato dish.

This was so easy to make and absolutely delicious!  The variety of textures and the kick from the spicy cheese make it really special.

Could I use crushed ritz crackers instead of chips?

Everyone LOVED this - so easy and flavors are perfect!! Family has requested this often.

Deeeeeelicious.My husband and daughter loved it. They gobbled it down before I took it out of the oven.
