Step 1
Place the pork chops between two pieces of plastic wrap.
Step 2
Very gently pound the covered pork chops using a rolling pin or the flat side of a meat mallet. The purpose is not to flatten them much but rather to tenderize them, so 4-5 gentle smacks will do.

Rub the tenderized pork chops with the oil and the mustard.
Step 4
In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, and pepper.

Rub the seasoning mixture all over the pork chops.

Bake the coated pork chops until an instant thermometer inserted into the center reads 145 degrees F, about 12-15 minutes, or depending on the thickness, about 6 minutes per 1/2 inch of thickness.
Step 7
Turn the oven to broil.
Step 8
Broil the baked pork chops until browned, about 1-2 minutes.
Step 9
Transfer the baked pork chops out of the oven and allow them to bake for 5 minutes.
Step 10
Serve.
