Step 1
Preheat your oven to 450°F. Butter or spray a round cake pan or a sheet pan with cooking spray and set it aside.
Step 2
To a large mixing bowl, add the flour, baking powder, salt, and baking soda and whisk until combined. Add the cold butter to the bowl and use a pastry cutter or your fingers to cut the butter into the dough until it resembles coarse crumbs.
Step 3
Pour one cup of buttermilk into the bowl with the flour and use a wooden spoon to mix the dough until all the flour is moistened and it starts to come together. If the dough is too dry to hold together, add up to 1/4 cup more buttermilk and mix until the dough is slightly sticky but not wet. Do not overmix the dough.
Step 4
Turn the dough out onto a lightly floured surface and pat it into a disc about 3/4-inch thick. Use a 2 1/2-inch biscuit cutter to cut out 8 biscuits. Reshape the scraps into another disc and cut out 2 more biscuits.
Step 5
Place the biscuits closely together in the cake pan or on a baking sheet and brush the tops with melted butter. Bake the biscuits for 12 to 15 minutes or until golden brown on top. Brush the tops with more melted butter when they come out of the oven.
