Preheat oven to 350ºF.
Step 2
Cut your jalapeños lengthwise and remove seeds, leaving a little pocket for your filling. Don't touch your eyes! Or better yet, use some disposable kitchen gloves.*

Mix cream cheese, parmesan, cheddar, sour cream, green onion, and spice together in a bowl. Once adequately mixed, spoon filling into your jalapeños.
Step 4
Meanwhile, heat butter in a skillet over medium heat. Once melted, add your Panko crumbs and toast until slightly golden brown.
Step 5
Spoon toasted Panko crumbs onto filling in your jalapeños, pressing down slightly to lock them in place.
Step 6
Place poppers on a lightly greased baking sheet (I use PAM on a tin foil lined baking sheet) and bake at 350ºF for ~30 minutes or until jalapeños have softened, cheese has melted, and breadcrumbs have gotten even more toasty. ENJOY!!
