Peri Peri Fries

Step 1

Cut the potatoes into thick slices and then cut into even-sized fries.4 large potatoes

Step 2

Transfer to a large bowl and cover with cold water. Leave to soak for at least 15 minutes, but you can leave them for a couple of hours.

Step 3

Preheat the oven to 430ºF/220°C

Step 4

Drain and rinse the potatoes, then dry well on a clean tea towel.

Step 5

Place the potatoes in a dry bowl and pour over the oil.¼ cup of your chosen oil

Step 6

Turn the potatoes with your hands until they are all evenly coated.

Step 7

Place two baking sheets in the oven to heat up.

Step 8

Remove the trays from the oven and line them with cooking paper.

Step 9

Bake the potatoes in the middle to bottom of the oven for 35-40 minutes, until the potatoes are cooked through, and crispy and golden on the outside. (Depending on your oven, you may need to switch the trays over halfway through cooking.)

Step 10

Remove the potatoes from the oven, tip into a bowl, and sprinkle with the peri peri seasoning mix while they are still hot.3 tbsp peri peri seasoning

Step 11

Preheat your air fryer to 375ºF/190ºC and your oven to 200ºF/90ºC

Step 12

Drain and rinse the potatoes, then dry well on a clean tea towel.

Step 13

Place the potatoes in a dry bowl and pour over the oil.¼ cup of your chosen oil

Step 14

Turn the potatoes with your hands until they are all evenly coated.

Step 15

Add the first batch of fries to the bottom of the air fryer basket, making sure not to stack them on top of each other.

Step 16

Cook for 15 minutes until crispy and golden brown.

Step 17

Place the cooked fries on a rack on a baking sheet.

Step 18

Place in the warm oven, and while you cook, the other batches of fries are cooking.

Once you are done with all the potatoes, remove them from the oven, tip into a bowl, and sprinkle with the peri-peri seasoning mix while they are still hot.3 tbsp peri peri seasoning

Cook the fries as per the packet instructions.1lb/450g frozen fries

Step 21

To make the most of your frozen fries, preheat your oven/air fryer and don't allow the fries to defrost beforehand.

Step 22

If you can, bake the frozen fries on an oven rack to ensures they cook evenly.

Step 23

Once cooked, sprinkle with the peri peri seasoning blend and serve.3 tbsp peri peri seasoning
