Ingredients: 8 (4 ounce) chicken cutlets; ½ teaspoon salt; ½ teaspoon ground pepper; ¼ cup refrigerated basil pesto (such as Buitoni); 4 medium plum tomatoes, sliced; 1 ½ cups shredded whole-milk mozzarella cheese; ¼ cup thinly sliced fresh basil; 2 tablespoons pine nuts, lightly toasted

This pesto chicken bake is easy to make as well as delicious! The chicken stays moist while the cheese on top gets bubbly and crispy. The pesto, mozzarella and tomato combination is a home run every time. Serve the chicken over pasta or your favorite grain.

Pesto Chicken Bake

(4 ounce) chicken cutlets

salt

½ teaspoon ground pepper

refrigerated basil pesto (such as Buitoni)

plum tomatoes, sliced

mozzarella cheese

basil

pine nuts,

Place rack in top third of oven; preheat to 425 degrees F. Coat a large rimmed baking sheet with cooking spray. Arrange chicken in a single layer on the baking sheet. Sprinkle the chicken with salt and pepper and spread evenly with pesto. Top with tomato slices and cheese.


Bake until the chicken is cooked through and the cheese is lightly browned and bubbly, 18 to 20 minutes. Top with basil and pine nuts. Serve immediately.


I made the recipe without any changes and it was delicious served with brown rice and sautéed spinach. The combination of chicken cutlets and a jar of pesto (used an entire small one) couldn’t have been easier and faster.

I was surprised at how quick and easy it was to prepare and super tasty! Definitely a keeper!

I wanted to try this, but I was a little worried whether or not my picky family would like it (I am both the husband and the cook in our house).  The only thing I changed was in that I steamed several tomatoes to remove the skins before slicking them and laying the slices on the breasts. I did this because--for some odd reason--my family does not like to eat broiled or baked tomato slices (did I mention that they are picky?).  Anyway, this meal was such a big hit!  The individual flavors of the ingredients really stood out in a delightful way.  I especially liked taking bites that randomly might have some pine nuts in one and maybe fresh basil slivers in another.  Again, this was truly a great dinner meal!  Thank you for shaing it!

This recipe was so easy to make! The chicken was super juicy. I served it with some roasted Brussels sprouts and it was the perfect, one-pan dinner.

Super easy and very flavorful.  Toasting the pine nuts added a nice touch

I served this over quinoa and it was delicious.
