Step 1

Steam or boil carrots until extra soft. Drain well.

Step 2

While carrots are warm, add sugar, baking powder, and vanilla.

Step 3

Whip carrots with mixer until smooth.

Step 4

Add flour and mix well.

Step 5

Whip eggs and add to flour mixture, blend well.

Step 6

Add softened butter to the mixture and blend well.

Step 7

Pour mixture into 13 X 9-inch baking dish about half full as the souffle will rise.

Step 8

Bake at 350 degrees for about 1 hour or until the top is a light golden brown.

Step 9

Sprinkle lightly with powdered sugar over top before serving.
