Place the flour in a medium bowl. Make a well in the centre and add the eggs. Use a whisk to whisk until the eggs are smooth. Slowly whisk in milk and cream until a smooth batter forms. Season. Stir through ham, cheddar and shallot. Transfer the mixture to a large jug.
Step 2
Pour enough mixture to come to the top of the pie maker holes. Close and cook for 4 minutes. Place a piece of extra cheese in the centre of each quiche. Close and cook for a further 4-5 minutes or until cooked through. Transfer to a plate and repeat with the remaining mixture and cheese in 2 more batches. Serve scattered with extra shallot.
